Frozen summer recipes that cool you down while Pelham bakes

There are many things that make summer enjoyable, but heat waves are not one of them. As Pelham residents continue to wake up to excessive heat warnings this week, cold or frozen foods become increasingly appealing. Here are some you can easily make at home.

Fizzy Pineapple Punch

Ingredients:

  • 1-12 oz. of canned frozen pineapple juice from concentrate, thawed
  • 1-6 oz. of canned frozen limeade from concentrate, thawed
  • 4 1/2 cups of cold water
  • 1 liter of club soda, chilled
  • Assorted fruits (strawberries, raspberries, blueberries, oranges, limes, pineapples)

Instructions:

  1. Pour thawed pineapple juice concentrate and thawed limeade in a large pitcher.
  2. Add the cold water and 2/3 of the club soda.
  3. Stir the mixture and chill.
  4. Add ice cubes and assorted fruits to serving glasses.
  5. Pour the punch into the serving glasses.
  6. Garnish with fresh mint and add the last of the club soda.

 

Frozen Fruit Pops

Ingredients:

  • Two cups of summer fruits (strawberries, peaches, watermelon etc.)
  • One tablespoon of sugar
  • One teaspoon of fresh lemon juice
  • 1-2 tablespoon of water

Directions:

  1. Place the fruits of your choice into a blender.
  2. Place lid on blender and blend until smooth.
  3. Add 1-2 tablespoons of water. Then add the sugar and the lemon juice and blend until well mixed.
  4. Pour the mixture into 4 oz. ice-pop molds or paper cups, insert popsicle sticks and then freeze until solid.

 

Fresh Fruit Popsicles

Ingredients:

  • Pink Lemonade or Raspberry lemonade
  • Summer fruits (Raspberries, Blackberries, blueberries, chopped strawberries)

Instructions:

  1. Pour lemonade into popsicle tray or ice cube tray about 1/2 to 2/3 the way filled.
  2. Pick a few different fruits and place into the juice.
  3. Take popsicle sticks or toothpicks and place in the juice.
  4. Freeze until solid and enjoy!
