Clay Bushong, co-owner of Cantina Lobos, buys Double Rainbow ice cream store

Pelham will have a change in the ownership of the town’s ice cream store, Double Rainbow. Clay Bushong, the co-owner of Cantina Lobos and programming director of the Pelham Picture House, has decided to become the new owner of Double Rainbow—and is ready for the ice cream season.

“When the landlord called me saying that the previous owner was putting it up on the market, we jumped at the idea,” Bushong said. “It’s been a place we have been going to for a long time, and we always talked about what we would do to up the game there.”

Although this may be uncharted territory for Bushong, he will have some help from someone in the business.

A friend of Bushong’s in Montana founded an ice cream brand, The Big Dipper, about 20 years ago. Because of his experience, he has been giving Bushong advice about the industry and will continue through the opening of the store. 

Everyone loves ice cream, however not many people would be interested in what happens behind the scenes making the delicious treat. The Bushong family has kept themselves busy during quarantine by making ice cream and trying new flavors.

With the summer fast approaching, Bushong is eager to get the store open and start selling. He plans to run it as is and close for renovations in the fall. Residents can look forward to offerings that will be introduced in the summer.

Bushong has been talking to the owner of local coffee shop Caffè Ammi and hopes to add some of their products to the menu. “As for the rest, let’s just say once we get up and running, we are excited about things to come,” he said.
